Mukimo is a common and popular dish among the Kikuyu community.
It is a traditional dish that consists of maize, beans, green vegetables, and potatoes which are mashed together.
The dish is loved by both old and young for different reasons and perhaps, for all the nutrients it carries.
There are different types of this dish depending on the occasion and the people it is being cooked for.
For instance, 'mukimo' prepared during a funeral is different from that prepared on a wedding day.
Jennifer Waitherero, a chef at a local Kiambu town restaurant says that ty delicacy in the past would be eaten on specific days and occasions but things have changed as it is now a regular meal in many homes.
While the dish is easy to prepare, it requires keenness and technique. It takes a while to prepare it and the process starts with boiling the maize and beans or peas.
Here is the recipe on how to prepare Mukimo for a five people:
Ingredients
3 cups of maize (corn)
2 cups of beans or peas
10 sliced potatoes
5 sliced carrots
1 large onion
3 sliced tomatoes
2 large clove s of garlic, crushed
Cooking oil
Salt
Method:
Boil the maize (corn) peas or beans, adding water continuously for 1 to 2 hours until well cooked.
Drain the excess water to ensure the ‘githeri ‘remains dry.
Slice the onion and tomatoes into a saucepan.
Add crushed garlic until the mixture creates a delicious aroma.
Add carrots, tomatoes, and potatoes.
Cook until the potatoes and carrots are yummy.
Add salt, water (2 medium cups) and allow it to boil for 15 minutes.
Pour the boiled githeri into the mixture, cover the pot and simmer the mixture in medium heat.
Do not stir, but leave it to cook until the water is completely gone.
Marsh to mixtur and season with salt or pepper to your taste.
Serve with stew, vegetables or kachumbari.
