Onions are a favorite in the kitchen but cooking with them can be a tearful experience both during chopping and cooking. During chopping, ensure you rinse it in cold water, then soak raw slices in lemon or lime juice for a while to mellow the flavor.
There are two types of onions such as the red onions which are rich in anti-inflammatory quercetin and spring onions which are rich in folic acid and vitamin C. Here are some cooking experience that can prevent you from shedding more tears while ensuring you get the best nutrition:
1. Griddle. Cook whole spring onions on a griddle pan until slightly charred and slightly softened. The onions are then perfect served as an accompaniment to steamed fish with ginger and a splash of soy.
2. Caramelise. Slice red onions and stir-fry them with olive oil over low heat until they are sweet and sticky. They will cook down a lot, so make sure you stir with plenty of water. Then serve with low-fat sausages and cheese.
3. Simmer. Stir fry baby shallots in olive oil until tender then simmers in reduced salt stock with garden peas for 3 minutes. Stir in some shredded lettuce before serving.
