It refers to dry maize whose husks has been removed and cooked with beans or peas.Muthokoi is loved because it is an energy-giving meal.

The dish takes a few hours to make and the process starts with boiling the maize and beans or peas.

Muthokoi can be served with vegetables like cabbages, pumpkin leaves or even potatoes and cowpeas' leaves.

Here is the recipe on how to prepare the delicious dish for a family of three people.'

Ingredients:

1 cup of Muthokoi (dry maize with husks removed)

11/2 cups of dry cowpeas, pigeon peas or beans

1 large onion 

2 large cloves of garlic, crushed

4 chopped tomatoes

Cooking oil

Salt 

Method: 

You can start by soaking the maize and peas to make them softer before boiling them.

Boil the Muthokoi and peas, adding water continuously for 1 to 2 hours until well cooked.

Drain the excess water to ensure the Muthokoi remains dry. Slice the onion and tomatoes into a saucepan.

Add crashed garlic until the mixture creates a delicious aroma.

Add carrots, tomatoes, and potatoes.

Cook until the potatoes are yummy.

 Add salt, water (2 medium cups) and allow it to boil.

Pour the boiled Muthoki into the mixture and allow it to cook for 20 minutes.

Serve with the stew of your liking or with tea or juice.
