KDF mandazi is the most loved baked foods among various people. It's usually square and has a lot of flesh inside unlike other baked products in the market. The name KDF comes after the Kenya Defense Forces representation of the country and thus the same representation KDF mandazi has on our stomach and overall body satisfaction. A great synonym, right?

Many individuals admit that it gives them quick satisfaction to their hunger pangs. However, few individuals know how to make them and just end up purchasing it at Sh10 whenever they feel the urge to eat KDF. 

Here’s a quick and easy recipe on how to prepare your homemade KDF mandazi:

INGREDIENTS

1 1/2 cup self-raising flour

1/2 cup sugar

1/4 teaspoon salt

1 egg, beaten

1 cup milk

4 tablespoons margarine

4 cups vegetable oil

INSTRUCTIONS

Mix all the dry ingredients

Add the margarine to the mixture and mix until texture is crumb-like.

Add the egg and milk. The dough should be soft but should not sticky.

Cover the dough and let it sit for at least 30 minutes.

Place the dough onto a floured surface. 

Cut into small shapes you want. Heat up oil to medium heat in a frying pan.

The KDF mandazis should cook for at least 4 minutes on each side. Once they have a nice golden brown color, remove from the oil.To test your oil for readiness, drop a small piece of dough inside. The dough should stay at the bottom of the pan for a minute before rising up. If it comes up immediately, the oil is too hot; the inside of your KDFs will not cook. If your oil is not hot enough, the KDFs will absorb a lot of oil by sitting at the bottom of the pan for too long. Finally, you KDF should be ready to eat. Two KDFs plus porridge is equivalent to lunch or supper for that matter. Enjoy!
