Odinga said that people are going back to indigenous healthy foods after realising that it is the only healthier way of eating.

"I would like to see this type of cuisine among young upcoming staff in hospitality industry. It is important that we bring back our indigenous food to the hospitality industry now that most people have realised that it is a healthier style of eating,” said Odinga.

She added, “Many people come to Kisumu and they want to eat fish, they rush to Lwang'ni Hotel or Tilapia Resort, which sometimes do not have fresh fish served at the Five Star Hotels."

The Kisumu County Deputy governor said it looked like it is only the non-starred hotels within Western regions that provide indigenous delicacies, observing that well-known Five Star Hotels only serve Western cuisine.

She said that if one goes to Japan or Korea, he/ she will be forced to eat meals and famous Sushi using chop sticks, since those people maintains their indigenous cuisines.

Odinga was speaking at Sunset Hotel in Kisumu during the closing ceremony of a two weeks’s refresher training of hoteliers.

She said that the refresher courses are important for those employed in hospitality industry just as well as other sectors.

"You have been accorded a perfect opportunity in irreplaceable opportunities which will go a long way in complimenting the vital knowledge you already have,” said Odinga.

She added, "Tourism and Hospitality industries are exceedingly dynamic from the customers’ taste to product and service packaging."
