Eating poorly cooked rice is a major cause of cancer and fibroids, a new research has shown.

According to Prof Oladapo Ashiru, the president of Africa Fertility Society, poorly cooked rice contains arsenic- a chemical metalloid- which interferes with the reproductive system and causes cancer.

In a publication by Daily Nation on Thursday, he said rice picks up these chemical elements which are naturally found in the soil and in groundwater often used to irrigate the grain in the dry season.

"Arsenic metal lowers progesterone levels but increases oestrogen, impairs ovulation and lowers thyroid function which are all causes for fibroids and infertility," he said.

Prof Andy Meharg of Queen's University in Belfast, who has been studying arsenic for years, said the problem, however, had an easy solution.

He outlined the recommended way to cook rice.

1. Put the rice in a jug and add water.

2. Soak rice overnight.

3. Wash, then rinse the rice properly, until the water is clear.

4. Drain well.

5. Place rice in a saucepan in a 5:1 water-to-rice ratio.

6. Bring to a boil, then turn the heat down and cover the pan tightly with a lid.

7. Cook on low heat for 10 to 15 minutes without uncovering the pan.

Prof Ashiru also said boiling the rice and pouring out the water and then boiling again also reduces arsenic content in the rice.

"I am worried about the way this commodity is being prepared. Most people are not even aware they are endangering their lives. As long as they are full, that is it," he said.

The two fertility researchers were speaking during a meeting organised by Merck Foundation in Cairo, Egypt on Wednesday.
