UgaliUgali is the number one staple food among all tribes in Kenya. Mostly, people cook ugali from maize floor. However, communities like the Luhya and their neighbors cook ugali even from millet or sorghum floor and it’s very delicious. Ugali is cooked in boiling water which is mixed with either maize, millet or sorghum flour until it forms a dough-like solid.

MukimoMukimo is a staple food mainly among the Kikuyu communities. Mukimo is prepared by mixing mashed potatoes with beans, maize, peas and even pumpkin leaves. The delicious meal, which looks like ugali is then served either with a meat stew or a chicken stew.

PilauCommon among the Coastal people. Pilau has been there staple meal since they use it mostly in “parties.” Cooking pilau requires a mixture of flavors, which makes it very delicious. Beef pilau is the most loved among communities in Kenya. Cooked by mixing rice with beef and adding your flavors one after the other.

GitheriMost people eat githeri at lunchtime. However, githeri can be a delicious supper too. It’s the simplest meal to prepare as it involves sorting maize and beans, wash them, then boil them in water until they all soften. Then you can fry your githeri or add salt and eat it straight after boiling.

ChapatiEveryone loves chapati. Chapati can be eaten with either githeri, tea, or any stew. Chapati is prepared from the wheat flour. Make a dough of this floor then leave it for 15 minutes to ferment. Wound the dough into a coil then make small portions which are rolled into round circles using a rolling board. Fry this round circular dough over a frying pan with cooking oil. Chapati has always been considered a special meal and most communities cook it when there is a party.
